Butternut Squash, Cauliflower, and Goat Cheese Pizza

Ingredients:

  • 1 whole wheat pizza crust

  • 1 cup butternut squash, diced

  • 1 cup cauliflower, chopped

  • 1 cup yellow onion, sliced

  • 1/2 cup kale, chopped

  • 1/3 - 1/2 cup goat cheese

  • 2 tbsp olive oil

  • 1-2 tsp garlic (2-4 garlic cloves), minced

  • Salt and pepper, to taste


Instructions:

  1. Preheat oven to 400 °F degrees.

  2. Add butternut squash, cauliflower, and onion to a baking sheet and toss with 1 Tbsp olive oil. Add salt and pepper to taste. Bake for 20 minutes or until the veggies are fork tender.

  3. Preheat oven to 450 °F degrees.

  4. Spread garlic and 1 tablespoon olive oil over the pizza crust. Add goat cheese and then the butternut squash, cauliflower, and onion. Season with salt and pepper to taste.

  5. Bake pizza for 15-17 minutes until the crust is golden brown and cheese is melted (the time may be less if using a different crust). Add kale half way through at about 8 minutes. Drizzle with olive oil.
