Frozen Greek Yogurt Bark

Makes 1 sheet pan (serves 4-6)

Ingredients:

  • 1.5 cups plain full-fat greek yogurt

  • 2 tbsp honey or maple syrup

  • 1 tsp vanilla extract

  • 1/2 cup fresh strawberries, sliced

  • 1/4 cup chopped hazelnuts

  • 1/4 cup shredded coconut

  • 2 tbsp dark chocolate chips

  • 1 tsp coconut oil

Instructions:

  1. Preheat oven to 350 F. Add chopped hazelnuts to baking sheet and bake for 10 minutes or until fragrant and golden brown.

  2. Line a separate baking sheet with parchment paper.

  3. Add greek yogurt, honey or maple syrup, and vanilla extract to a medium mixing bowl and stir until combined.

  4. Add chocolate chips and coconut oil to a small microwave-safe bowl and microwave in 30 second increments, stirring each time, until melted.

  5. Spread Greek yogurt evenly across the parchment-lined sheet pan (about 1/4 inch thick layer). Layer sliced strawberries, hazelnuts, and shredded coconut. Drizzle melted chocolate.

  6. Freeze overnight or for at least 3 hours. Cut or break into pieces and store in an airtight container or ziplock bag. Recommended to serve directly from freezer to avoid melting.
