Peanut Butter & Jelly Energy Bites

Snacks can be just what you need to tide you over between meals or to get you through a busy day. That being said, many snacks often lack a healthy combination of fats, protein, and carbs to keep you fueled and satisfied. Enter my new favorite snack: PB&J Energy Bites. They’re balanced, protein-packed, and reminiscent of a childhood classic. They’re also made with just 6 simple ingredients, so you can easily make these anytime you need on-the-go fuel or a quick bite.

Hemp seeds, sunflower seeds, and peanut butter pack in the protein and healthy fats; oats and dried cherries add fiber; and dried cherries and honey combine to bring that sweet jelly flavor.

Peanut Butter & Jelly Energy Bites

Makes about 25-28 energy bites

Ingredients:

  • 1 1/2 cup rolled oats

  • 1 cup creamy peanut butter

  • 1 cup dried cherries

  • 1/4 cup hemp seeds

  • 1/4 cup sunflower seeds

  • 1/4 cup honey (or maple syrup)

  • 1/2 tsp sea salt if using unsalted peanut butter

*I love cherries in this recipe, but you could substitute for another dried fruit if you can’t find dried cherries or prefer another option

Instructions:

  1. Add all ingredients except oats to a food processor and pulse until a sticky dough forms. The dried fruit will remain in larger pieces, but aim for all other ingredients to be chopped finely.

  2. Add oats to the food processor and pulse until the oats are just mixed. The dough should be slightly sticky. You can add more peanut butter if it’s too dry.

  3. Scoop dough and use hands to press into a ball shape (about 1.5 tbsp each).

  4. Store in an airtight container in the fridge.
