Fiber-rich cauliflower and onions and protein-packed chickpeas are tossed and baked with flavorful spices to provide the base of these tacos. The rest of the nutrient-dense ingredients are simply layered onto whole wheat tortillas for a simple yet tasty dinner or lunch that will keep you full and satisfied.

Cauliflower Chickpea Tacos

Makes approximately 8 tacos

Ingredients:

  • 8 6-8 inch whole wheat or corn tortillas

  • 1 can chickpeas, drained, rinsed and rubbed dry

  • 1 head cauliflower, chopped

  • 1 yellow onion, sliced

  • 1-2 tbsp olive oil

  • 2 tsp ground cumin

  • 2 tsp chili powder

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1/2 tsp salt

  • 2-3 avocados

  • 2 limes

  • 1 jalapeño, minced

  • Plain greek yogurt (for topping)

  • Pico de Gallo (for topping)

  • Fresh cilantro (for topping)

*boost the protein content by adding in tofu to the cauliflower, onion and chickpea mix

*You can easily make these vegan by omitting the greek yogurt or using a non-dairy alternative

Instructions:

  1. Preheat oven to 375 °F.

  2. Add chickpeas, cauliflower, and onions to a large mixing bowl. Add in olive oil and spices (cumin, chili powder, paprika, garlic, salt) and toss until well combined and chickpeas, cauliflower, and onion are coated in spices.

  3. Place mixture on a baking sheet and bake for 35-40 minutes (or until chickpeas are crispy and cauliflower and onion are fork tender).

  4. In a small bowl, mash the avocados and add juice of 1 lime. Stir to combine.

  5. Assemble tacos: Spread a scoop of mashed avocado on the tortilla. Next top with a large scoop of cauliflower, onions, and chickpeas, pinch of jalapeño, dollop of pico de gallo, dollop of greek yogurt, squeeze of lime juice, and pinch of fresh cilantro.
